Food Systems Consulting and The Foodservices Planning Group teamed up with the Oakville Trafalgar Memorial Hospital in 1998 to help them improve their foodservice sales results and upgrade their operations.

The growth strategy included:
  • the assessment of the foodservice operations in place
  • the development of a Business Plan to realize sales growth
  • the relocation and expansion of the existing Tim Horton's outlet, with the new outlet offering on-site seating and an expanded menu
  • the creation of 7 new eatery shops under the Parson's Pantry banner, including a Campbell's Souper Bar, a Deli Carvery, Fresh Pizza, Sweet Temptations by Sara Lee and Parson's Self-Serve
  • the implementation of a POS cashless system
  • As a result of these upgrades, the client saw transactions increase by 5,000 in the first full month of operation following renovations. Projected results for this 240-bed hospital are favourable: $1.2 Million in annual revenues with a 16% return on an initial investment of $190,000. In 2000, Julie Davis, Director of Foodservices at OTMH received the coveted HFM Spotlight on Innovation Award for Parsons Pantry.
